feeds a lot. Served with a salad and some garlicbread - a great meal!
- 1-½ pound Ground Beef
- 1 pound Sausage
- 2 teaspoons minced Garlic
- 2 large cans Tomatoes; diced
- 2 cans Tomato Paste
- 3 Tablespoons Dried Parsley
- 2 Tablespoons Dried Basil
- 1 teaspoons Salt
- 24 oz. tub of Cottage Cheese
- 2 Eggs
- 1 cup Parmesan Cheese (grated)
- 4-6 cups Mozzarella Cheese; shredded
- 1 package "Oven Ready" Lasagna Noodles
Brown ground beef, sausage, and garlic together in a skillet. Drain; add tomatoes (I puree the tomatoes in the food processor - only because my husband won't eat tomato chucks??), tomato paste, (1 Tblsp) parsley, basil and (a good shake) salt. In a bowl, mix cottage cheese, eggs, 1/2 cup of Parmesan cheese, the rest of the parsley and salt. Stir together well. Here's the fun part! Using the "Oven Ready" noodles - you don't have to boil them (Yahoo!) Lay out lasagna noodles to cover the bottom of a greased 9x13 pan. Add a layer of the cottage cheese mixture and then add a layer of mozzarella cheese. Spoon on a layer of meat mixture. Repeat the layering method - ending with meat on top, add lots and lots of Parmesan Cheese! Bake at 350 for 30-45 minutes. I usually make two 8x8 casseroles; serve one for supper and freeze a second for later!

Hug the ones you love!

This sounds like a great recipe for lasagna. Oven ready noodles sound great. That is the worst part of making lasagna. Thanks for sharing.
