

Hello!  In leu of the "rainy day" weather, this week's recipe swap is our copykat recipe for
 "Broccoli-Cheese Soup" 
 T.G.I. Friday's style!  
This is such a "comfort" soup - warm and tasty!  Sided up with a sandwich - the perfect meal on a rainy day!  Hope you are having a great week!  It's been a busy one here!

Broccoli-Cheese Soup
4 cups water
2 cups potato - peeled & diced
2 chicken bouillon cubes
1 tsp. garlic; minced
1/2 cup minced onion
2 10 oz. package; chopped broccoli; frozen
2 cans Cream of Chicken soup
1 lb. Velveeta; cubed
Combine the water, potato, bouillon cubes, onion, garlic and broccoli in a large pan.  Bring to a boil and cook for 15-18 minutes, or until the potato and broccoli are tender.  Add the canned soups and the cheese, stirring until the cheese is melted and smooth.  Simmer for 10-12 minutes for the soup to thicken.  Serve warm!

Entered my "teapot notepad purse" in a creative contest...  Saw this teapot as a "girlie" manicure set at one of our local boutiques and just had to try it as a notepad holder. I think this is a great contest and hope you win. I will try to vote for you (remind me). But is this her "lazy" way of getting a bunch of swaps to take with her. Make sure you put your name on it.
