Super Bowl Recipe Swap!

Here are two recipe swaps that we tried over the Super Bowl Weekend!

The first is "easy-peasy" - Buffalo Chicken baked in a crock pot, pulled and served on a toasted bun or roll - makes an EXCELLENT hot sandwich! It only has 3 ingredients + your roll!

Crock Pot Buffalo Chicken

3 lb. frozen bag Chicken breast tenders
Frank's "Red Hot" Buffalo Wing sauce
1 pkg. Ranch Dip Mix

Cook on low for 6-7 hours in a crock pot; pull chicken tenders apart with a fork (and I added 2 Tblsp. butter) return back into the crock pot - cooked about an hour more. Serve on toasted buns or rolls.

These hot sandwiches are VERY tasty! My boys thought that these were "IT"! I, on the other hand, was excited with the next recipe swap... Cheesy Quinoa Bites - this recipe was my favorite during the Super Bowl!

Liked this recipe so much that we're even considering it for next year's 4-H Food Show competitons for one of the boys... It's low in calories; about 130 calories for a serving of 4 bites - think I ate 2 servings on Super Bowl night! They were THAT good!

Cheesy Quinoa Bites

2 cups cooked quinoa
2 large eggs
1 cup shredded carrot
2 stalks green onion, diced
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1/2 cup grated Parmesan cheese
2 Tbs all-purpose flour
1/2 tsp seasoning salt
1/4 tsp freshly ground pepper

Preheat oven to 350 degrees. Prepare the quinoa to the package instructions (I used 3/4 cup of quinoa to 1 1/2 of water w/a chicken bullion cube - bring to a boil and cooked for 12-15 minutes). Mix together quinoa, carrot, egg, green onion, garlic, cilantro, cheese, flour, salt and pepper. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each). Bake for 20-25 minutes.
