My sweetheart LOVES the candy "Cherry Mash"! It's getting close to the big HEART Day (ya know - Valentine's Day)! Our family enjoys making candy - or more than making - EATING candy! LOL!
This week's recipe swap is dedicated to my hubby's sweet tooth (Ha!), a recipe for homemade CHERRY MASH! This recipe can be made into small balls and covered in chocolate and peanuts or made in a 9"x13" pan and cut into bars... your preference!
I also use the "Jiffy" brand frosting mix - for this recipe. I can only find the vanilla frosting now in our local stores - if you can find the cherry flavor frosting - grab it! Or just add the cherry extract and red food flavoring... it still taste great! Try this recipe and see if it taste like the store bought candy...
2 boxes "Jiffy" vanilla frosting mix
(cherry frosting is great IF you can find it...)
2 tsp. Cherry extract
Red food coloring
1 stick Butter; softened
1 can Sweetened Condensed Milk
2 lbs. Powdered sugar
1 jar (16 oz) Maraschino cherries, drain & chop
Chocolate Almond Bark
1/2-1 lb. peanuts - chopped finely
Mix the butter, sweetened condensed milk, and cherry extract together; stir in frosting and powdered sugar, then cherries. Add red food coloring to desired shade!
For individual candy: After all ingredients are well blended; roll into balls, place on cookie sheet and freeze for a short period of time. Heat in a microwave-safe bowl the chocolate almond bark until melted. Add chopped peanuts and mix well. Dunk candy balls to cover in chocolate. Let set and store in an air-tight container.
For bars: Pour mixture in a 9"x13" buttered pan. Let cool before putting on the top layer. Heat in a microwave-safe bowl the chocolate almond bark until melted. Add chopped peanuts and blended well. Spread over hardened cherry mixture. To serve, cut into bars.
