Left-over Beans “Bean Dip”
1 (8 oz) package cream cheese, softened
1 cup sour cream
3-4 cups of “Left-over” pinto beans
1 package taco seasoning mix
1/2 - 1 tsp. sriracha sauce
2 tablespoons dried parsley
1/4 cup chopped green onions
1 (8 oz) package shredded Cheddar cheese
1 (8 oz) package shredded Monterey Jack cheese
Preheat oven to 350 degrees. In a medium bowl, blend the cream cheese and sour cream. Mix in the “left-over” beans, taco seasoning, Sriracha sauce, parsley, green onions, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese. Transfer the mixture to an 8x12 inch baking dish. Top with remaining Cheddar and Monterey Jack cheeses. Bake in the preheated oven 20 to 30 minutes, until cheese is slightly browned.

Are you enjoying this 2011 Winter Season - great, huh! Love it! My boys love making snow ice cream when it snows. We always wait until after the 1st snow to make it - so when it snowed AGAIN this week - my boys were ready! Here's a real simple recipe for snow ice cream - I know others use sugar and egg - but I really like sweetened condensed milk (duh!).

I wish I had read this before I threw out all of those left-over beans!! I'll remember this for next time!
