Super Bowl Recipes

This Sunday is "Super Bowl" Sunday and with that -
come all the great "Super Bowl" FOOD!

Here's this week's recipe share - great for munching on during the big game!

It's a tried and true recipe and it includes left-over beans (don't be grossed out) - it's when you've fixed beans and have left-overs - just freeze and it'll be ready when you are to fix this yummy bean dip recipe. This recipe fixes A BUNCH - so it's great for a party!

Left-over Beans “Bean Dip”

1 (8 oz) package cream cheese, softened

1 cup sour cream

3-4 cups of “Left-over” pinto beans

1 package taco seasoning mix

1/2 - 1 tsp. sriracha sauce

2 tablespoons dried parsley

1/4 cup chopped green onions

1 (8 oz) package shredded Cheddar cheese

1 (8 oz) package shredded Monterey Jack cheese

Preheat oven to 350 degrees. In a medium bowl, blend the cream cheese and sour cream. Mix in the “left-over” beans, taco seasoning, Sriracha sauce, parsley, green onions, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese. Transfer the mixture to an 8x12 inch baking dish. Top with remaining Cheddar and Monterey Jack cheeses. Bake in the preheated oven 20 to 30 minutes, until cheese is slightly browned.

Promised also to make KV his very favorite cheese dip by Trisha Yearwood - her famous "Charleston Cheese Dip" . Alex is taking a Popcorn Cake and some "Sweet & Spicy Nuts" to his Super Bowl party! Who are you rooting for to win Super Bowl?

Are you enjoying this 2011 Winter Season - great, huh! Love it! My boys love making snow ice cream when it snows. We always wait until after the 1st snow to make it - so when it snowed AGAIN this week - my boys were ready! Here's a real simple recipe for snow ice cream - I know others use sugar and egg - but I really like sweetened condensed milk (duh!).

Snow Ice Cream

8-9 Cups of Fresh Snow
1 can Sweetened Condensed Milk
1 tsp Vanilla
Place snow into a large bowl. Pour condensed milk over and add vanilla. Mix to combine. Serve immediately in bowls.

Along with Snow Ice Cream - we even made some Snow Men! Aric made the "smallest" snowman ever and then the next day - the 3 made a snowman - but used all the snow from the yard! LOL! It's suppose to snow again tomorrow - so maybe our new creation will last - maybe - ! Had to include some pics of "the girls" too! They LOVE the snow - little toots! They turned 2 months this week - Roxie & Molly.

Hope all is well with you and yours! Hope you have a fabulous weekend! Take care and hug the ones you love the most!

Only your family could make such a "picture perfect" snowman! Do you guys just ooze talent all the time? Wow! I am completely impressed!

I wish I had read this before I threw out all of those left-over beans!! I'll remember this for next time!

I agree with Kim...impressive snowman. Can't there be just one non-talented person in your family???

JK!!
