SNOW? Oh my...


Here in our small Texas town - we hit a record high temperature of 94 on Monday - today (Thursday), 3 days later, we are having SNOW in our forecast! Only in Texas! LOL! The snow - is the blue part - moving over to us by this afternoon.

SO! It's "Cowboy Soup" in front of the fireplace tonight - to the dismay of my middle son - the football games were cancelled tonight! YAHOO! Family Night! LOL! What game will I beat them at tonight? Spades, Chicken Foot... hmmmm!

Here's a recipe that our family came up with using the 15 bean mix - compared to the classic - Taco Soup! It takes planning ahead for this recipe - but it has become a "comfort food" for my family! Especially eaten during cold weather or anytime... love coming home to something cooking in the crock pot!

Cowboy Soup

1 pkg "15 Bean" soup mix
Water
1 lb. Ground Beef
1 can (10 oz.) Diced Tomatoes w/green chilies
1 pkg Taco Seasoning
1 pkg. Hidden Valley Ranch Dressing
1 cup
16 oz. Process Cheese Loaf; cubed
2 cans Corn; drained
2 - 8 oz. can Tomato Sauce

Soak the "15 Bean" soup bean mix in water overnight; drain. In a crockpot, cover beans with water and cook for 4-5 hours on medium/high. Brown ground beef; drain fat. Add into the crockpot of beans: cooked beef, canned and dry ingredients. Add milk, tomato sauce and cubed cheese - Cook additional 45 minutes-1 hr until cheese is melted and blended into the soup. Serve with tortilla chips! Serves 10-12 (1 cup servings)

The October "Sip & Swap" Card Swap was held last night at a local mexican restraurant - requirements were Circles, Pink and Birthday... there were 9 out of 10 of us this month that completed the task!

My project is this one on the left! It's color scheme is pink and brown; I love this EASEL card technique. I have used it often in the last month... A variety of texture and sizes of circles used for the background in different shades of pink and of chocolate brown. The focal point is a SU stamp of cupcakes - colored with copic markers. "Happy Birthday to You" and "Just Thinking of You on Your Birthday" SU stamps... along with brads, ribbons and glitter. Here are the others cards from the swap - we have a lot of creative talent in this small town!
