Plant-based Recipe - Crock pot RATATOUILLE


Here's a version of a recipe that is for a 
PLANT BASED Diet!  

This recipe has
NO dairy, NO meat and NO oil!  




 Ratatouille  - not the rat movie!! - is a traditional French dish of vegetables.  It's an awesome dish to use your garden veggies and herbs!  It is usually served as a side dish with dinner, but is also used in breakfast and lunch - you can serve it over pasta, rice or a crispy bread (the latter is my favorite!).  Use your zucchini, onions, squash, eggplant, garlic, basil, thyme - whatever you have in your garden this summer in this dish and it's cooked in a CROCK POT (no heating up the kitchen - yahoo!) Another plus summer recipe!



RATATOUILLE
in a crock pot


1 28 oz Stewed Diced Tomato; undrained
2 Zucchini, cut into small chunks
2 Yellow Squash, cut into small chunks
1 Eggplant, cut into small chunks
1 Bell pepper, seeded and diced
1 Onion, diced
3 cloves Garlic
1 1/2 tsp Italian Seasoning*
1/4 tsp Crushed Red Pepper
1/2 tsp Black Pepper
1 1/2 tsp Sea Salt
2 tsp Tomato Paste
1 Tblsp chopped Parsley

*Substitute your fresh herbs that you have in your garden!  Remember that dried herbs are generally more potent than fresh herbs, so you'll need to add MORE of the fresh.  Typically 3X more of fresh as to dry.     

In a slow cooker, stir in tomatoes (I use an emersion blender to puree the tomatoes), zucchini, squash, eggplant, bell pepper, onion, garlic (I mince onion & garlic together in a food processor), salt, Italian Seasoning, crushed red pepper and black pepper.  Cook on HIGH for about 4 hours or low for 8 hours.  Add tomato paste and parsley and cook another 30-45 minutes.  

Serve (I serve over toasted multi-grain bread), then add more fresh chopped parsley -  enjoy a healthy meal!
