Happy New Year 2015 (Recipe Swap for Lentil Black-eyed Pea Soup)

We are celebrating at HOME - our weather here in the panhandle of TEXAS is very, very cold!  Thankfully, we are able to stay indoors and REST!  Very grateful for a job that allows us to be home with our boys during the holidays.


Here is a new recipe that we have enjoyed and are sharing with you for the tradition of New Year's Day!  

Found this recipe on my favorite youtube cooking channel - Laura Vitale - she is so AWESOME; including videos of how-to when she cooks - and there are so many recipes...  Here is a link to that recipe  - the only tweak that I've made is adding a can of black-eyed peas!  In Italy, they eat this lentil soup on New Year's Day - in America we eat black-eyed peas... that's why I've added this in the soup!  We love it - it even has KV's 2 thumbs up approval (which is very hard to get!!)

New Year's Day Lentil Black-eyed Pea Soup


10 oz of Brown Lentils; rinsed well

1/2 cup of any tomato product (I use a Sun-dried Tomato Pesto)

2 or 3 Cloves of Garlic, peeled but not chopped

3 Stalks of Celery, sliced

2 Tbsp of Parsley, chopped 
1 1/2 Tbsp of Olive Oil                                                                                                                1 can Black-eyed Peas 
Salt and Pepper, to taste 
1-1/2 cups of Short Cut Pasta

Fill a large pot 2/3 of the way with water. Add the lentils, tomato pesto, garlic, parsley, celery and olive oil and bring to a boil.  Reduce the heat a simmer and cook the soup for about 1 hour to 1 hour and a half or until the lentils are soft and tender.   Add the pasta along with black-eyed peas, salt and pepper; cook until the pasta is cooked al dente. Cover the pot with a lid and let the soup sit off the heat for 10 minutes.
