Quick Dessert Recipe




Here's a fast fix for something sweet - 
Chewy Macaroons.  
It's a coconut cookie that is lightly crisp on the outside and chewy on the inside.  You can make up a dozen, as you are cooking supper, adds the perfect sweetness after a meal.

Chewy Macaroons
2 egg whites
1/2 tsp. Vanilla
Pinch salt
6 Tblsp. Sugar
1 cup Coconut; flaked
In a small mixing bowl, beat egg whites, vanilla and salt until foamy. Gradually add sugar, beating until stiff peaks form. Fold in the coconut.  Drop by tablespoonfuls onto a well-greased baking sheet.  Bake at 300 degrees for 25 minutes or until lightly browned.  Immediately remove to wire racks to cool.  Yields 12-14 cookies

Hope you are having a great week!  This "weather" - we've had high in the 90's and now for Friday is predicted down in the 60's! What to wear, huh!  Cleaned out my closet this week of spring and summer clothes - ready for the cold!  Bring on the sweaters!  LOVE THE FALL!

Here's the design for my October birthday cards.  Can't believe it's already October - WOW!  I made a resolution in January to make everyone in our church family a birthday card this year - and now we're down to the 10th month!  It's been GREAT  and - difficult - but I've been blessed by it and had to put on my creative thinking cap on a couple of times!  Turned in my card swaps for September...
