Here's a fast fix for something sweet -
Chewy Macaroons.
It's a coconut cookie that is lightly crisp on the outside and chewy on the inside. You can make up a dozen, as you are cooking supper, adds the perfect sweetness after a meal.
Chewy Macaroons
2 egg whites
1/2 tsp. Vanilla
Pinch salt
6 Tblsp. Sugar
1 cup Coconut; flaked
In a small mixing bowl, beat egg whites, vanilla and salt until foamy. Gradually add sugar, beating until stiff peaks form. Fold in the coconut. Drop by tablespoonfuls onto a well-greased baking sheet. Bake at 300 degrees for 25 minutes or until lightly browned. Immediately remove to wire racks to cool. Yields 12-14 cookies

Here's the design for my October birthday cards. Can't believe it's already October - WOW! I made a resolution in January to make everyone in our church family a birthday card this year - and now we're down to the 10th month! It's been GREAT and - difficult - but I've been blessed by it and had to put on my creative thinking cap on a couple of times! Turned in my card swaps for September...
