Recipe Swaps - SNACKS




Hello, hello, hello!
Wishing you glad tidings and warm nights!  February is fast approaching and the first Sunday of February will be the 2014 Super Bowl football.  

Did you know that this event is 2nd for the most food fixed for a celebration; 1st being Thanksgiving?  WOW!  Who knew that our football has gotten so popular? I love viewing the new T.V. commercials...

Recently, at Floyd's 80th party (link here for party info), we fixed up snacks for the come and go guests.  I had the DIP department!  I fixed the awesome Pioneer Woman's Restaurant Salsa (link for recipe here) - this is a standard recipe that I fix at least every other month if not more... it's THAT good!  Now, we're in Texas and chips & salsa are a everyday snack - but I use this salsa a lot in other recipes! YUM!

Also prepared and served the standard Cheese Dip; gotta have a warm dip!  It does just fine in a crockpot along with plenty of tortilla chips or frito chips!  I omit the rotel tomatoes and use a cup of Restaurant Salsa instead - also add a can of cream of mushroom soup and a half of can of milk along with a bar of Velvetta cheese!  We like the consistency of this  dip better over our chips then the traditional Rotel Cheese Dip!


The dip that receive the most raves was a standard Knorr Spinach Dip that was served from a bread bowl!  KV's nephew Konner loved this dip - yahoo! This is also a favorite of Alex - son #2!  So, this is the recipe that I'll feature today for the weekly recipe swap!  Enjoy!

SPINACH DIP

10 oz. Spinach; frozen chopped
16 oz. Sour Cream
1 cup Mayonnaise
1 pkg. Knorr Vegetable recipe  mix
8 oz. Water Chestnuts; drained and chopped

3 Green Onions; sliced thinly  Thaw spinach and squeeze dry.  Combine all ingredients together and chill for 2 hours.  Serve in a hollowed out Hawaiian bread (round loaf) to form a bowl.  Cut remaining bread into small squares and serve along with crackers, vegetables and/or your favorite dippers.
